Rocambole garlics are a hard neck variety. They are the most commonly grown garlics in Canada. They do best in cold climates with cool springs and they do not thrive in wet conditions. The bulbs produce around 6-10 large cloves that are easy to peel. They have a well-rounded strong rich flavour. They keep well for 3 to 4 months, though if well cured and kept under the right conditions, it will keep until March-April.
